First of all;do not cut out the fat from a tri tip.The animal flat helps with the flavor.Secondly it depends on the girth of the tri tip.for every 2 inches.I would sear one side on high for 5 min flip it only once.Sear the other side for 5 min…turn the heat down to low/med…slow cook for about ten min….it really deprned on the temperature on how you like to eat your meat…….If you are using charcoal………use same method but when it is time to cook slowly spray a lil water on the coals……….put the meat on the top rack and slowly cok it….

It really depends on the thickness of the meat and how well done you like it. My husband barbecued tri-tip tonight and it took about 35 minutes…we like it medium rare. We use a meat thermometer inserted into the thickest part of the meat. When it reaches 130 degrees, it is perfect for us.
