Good For You and Yummy Chicken Thigh Recipes For The Slowcooker

If you are looking for a healthy and inexpensive source of protein, give chicken thighs a try. They are inexpensive, very tasty and quite healthy. My favorite way to cook them is in the crockpot. There are all sorts of different crockpot chicken thigh recipes out there and you can often substitute boneless skinless thighs for chicken breast. The meat is just as good for you and much more economical.

I’m sharing some healthy slowcooker recipes made with chicken thighs below.

Recipe 1 – Crockpot Chicken Stroganoff

Eight boneless, skinless chicken thighs
1 carton (16 ounces) of fat free sour-cream
1 packet of onion soup mix
1 can cream of chicken soup

Start by combining the can of soup, the soup mix and the sour cream in a small bowl. Add the thighs to the crockpot, then cover them with the soup mix. Cook on low for about 6 hours or until the chicken starts to fall apart. We like to pour the chicken and sauce over wide egg noodles.

Dish #2 – Crockpot Coke Chicken

6 to 8 chicken thighs
1 cup ketchup
1 cup cola
One large onion – sliced
Salt and pepper to taste

Start by seasoning your chicken with salt and pepper. Lay the thighs in the bottom of your slowcooker. Top with the sliced onion. Mix the ketchup and cola together and pour it over the chicken. Let everything cook on the lowest setting for 6 to 8 hours or until the chicken is completely cooked. Remove the bones and serve the chicken and sauce over cooked rice.

For a lower calorie dish use low-carb catsup and diet coke.

Recipe 3 – Thai-Flavored Slowcooker Chicken

6 chicken thighs
1 large can diced tomatoes (32 oz)
1/3 cup of peanut butter (all natural if possible)
1 bell pepper (sliced)
1 onion (sliced)
1/2 tsp red pepper flakes
Salt and pepper to taste

Start by layering the onion and peppers in the bottom of the crockpot. Top with your chicken thighs, adding salt and pepper to taste. Mix the tomatoes, peanut butter and red pepper flakes and pour everything on top of the meat and vegetables. Turn your slowcooker on the low setting and let everything cook for about eight hours.
We like this best over steamed rice.

Of course any of these dishes should be served with a nice big salad or a side of steamed green vegetables. Steamed broccoli is a family favorite with any of these.
